Research data was analyzed using ANOVA and Tukey's advanced test if there were differences in influence. The research results showed that Treatment P1 (10%) produced curd with the best characteristics in terms of total BAL 8.60×1011 CFU/ml, pH value 4.45, irradical inhibition zone formed with a diameter of 9.35 mm against Sterptococcus mutans. Meanwhile, in the organoleptic test, treatment P3 (20%) was the best curd chosen by the panelists including aroma 4.60 (liked very much), color 4.16 (liked very much), taste 4.40 (liked very much). However, in terms of texture, the panelists liked the curd treatment P0 (without adding date juice) 4.00 (liked). In conclusion, curd with the addition of date juice had a significantly different effect on total BAL, pH value, antimicrobial activity on Streptococcus mutans, aroma, texture and taste. The research methods used were quantitative and qualitative descriptive methods with experimental methods, Completely Randomized Design (CRD) using a factorial factor pattern (one factor), and three repetitions. The research results showed that lemongrass kombucha with fermentation times of 11 and 13 days both had a pH of 4. Meanwhile, the average vitamin C content of the 11-day fermentation was 21.56 (mg/100 g) from 3 repetitions and 24.66 (mg/100 g) for the 13-day fermentation. The average fermentation antioxidant content on day 11 was 84.10%, while on day 13 it was 84.70%. In conclusion, the vitamin C content and antioxidant levels increase as the fermentation process takes longer. So, the fermentation time has a significant effect on the vitamin C content and antioxidant levels, so lemongrass kombucha can be an alternative drink to replace tea drinks in general and is useful as a probiotic drink that is good for digestion.

Keywords: Antioxidants, Kombucha, Stevia Sweetener, Lemongrass, Vitamin C
Ilma Diana Fitri, Ambarwati Ambarwati ##submission.copyrightStatement## http://creativecommons.org/licenses/by-nc/4.0 https://journal.ipm2kpe.or.id/index.php/BIOEDUSAINS/article/view/9143 Fri, 21 Jun 2024 14:31:41 +0000 Analisis Kandungan Vitamin C dan Kadar Antioksidan Teh Kombucha Daun Pandan Wangi (Pandanus amaryllifolius) dengan Pemanis Stevia Berdasarkan Lama Fermentasi https://journal.ipm2kpe.or.id/index.php/BIOEDUSAINS/article/view/9203
This research aims to analyze the vitamin C content and antioxidant levels of fragrant pandan leaves with stevia sweetener based on fermentation time, so as to obtain the most optimum vitamin C content and antioxidant levels in kombucha tea. The research method is experimental research, namely by varying the fermentation time in making kombucha tea. The results of the research show that the longer the fermentation process takes to raise the pH of kombucha tea, the clearer the color of the kombucha tea is, the longer the fermentation process takes. The optimum vitamin C content was obtained on the 13th day of fermentation at 14.67 mg/100 g, and the optimum antioxidant content was also obtained on the 13th day of fermentation at 77.94%. Factor II is the variation in fermentation time (L) between 36 hours and 48 hours. The results of the research showed that the best total acid content of kefir combined with cowpea milk and skim milk was 0.96%, pH 3.5, in the G1L1 treatment (granulated sugar + 36-hour fermentation time). The best organoleptic quality of kefir was in the G1L1 treatment (granulated sugar + fermentation time of 36 hours), with a pleasant aroma, sour taste, less viscousness, and a white color.

Keywords: Cowpea, Kefir, Organoleptic, Skim Milk, Total Acid
Fransiska Fransiska, Titik Suryani ##submission.copyrightStatement## http://creativecommons.org/licenses/by-nc/4.0 https://journal.ipm2kpe.or.id/index.php/BIOEDUSAINS/article/view/10569 Sun, 23 Jun 2024 00:00:00 +0000 Efektivitas Pupuk Organik Cair Limbah Jerami Padi dan Batang Pisang Terhadap Pertumbuhan dan Kandungan Fosfor Tanaman Sawi Hijau (Brassica juncea L.) https://journal.ipm2kpe.or.id/index.php/BIOEDUSAINS/article/view/9970
The research aims to determine the effectiveness of the growth and phosphorus (P) content of green mustard plants (Brassica juncea L.) after administering POC from rice straw waste and banana stems at different time intervals and doses.
