Faktor-Faktor Yang Mempengaruhi Manajemen Food Waste Di Pondok Pesantren Zikir Al Fath Sukabumi
Abstract
Food waste merupakan isu global yang sangat penting dan menjadi fokus dalam Sustainable Development Goals, terutama di bawah Goal 12. Kerugian akibat Food waste diperkirakan mencapai 10.300 triliun di negara-negara industri dan 4.701 triliun di negara-negara berkembang. Indonesia menempati peringkat kedua secara global dalam hal Food waste per kapita, dengan rata-rata individu membuang sekitar 300 kg makanan setiap tahunnya. Food waste juga masih menjadi perhatian pesantren di Indonesia, yang menghasilkan sekitar 1 ton limbah makanan setiap bulannya dan totalnya mencapai 5.000 ton per tahun meskipun telah berusaha menyamakan jumlah makanan dengan jumlah santri. Penelitian ini bertujuan untuk menyelidiki faktor-faktor yang memengaruhi manajemen Food waste di Pondok Pesantren Dzikir Al Fath Sukabumi, dengan menggunakan Model Persamaan Struktural (SEM), khususnya Partial Least Squares SEM (SPSS-SEM). SPSS-SEM direkomendasikan karena fleksibilitas, kekuatan, dan superioritasnya dalam pengujian teori dan prediksi. Hasil dari penelitian ini adalah mengkonfirmasi bahwa pilihan makanan, praktik penanganan makanan, perilaku konsumsi, dan kebiasaan berbelanja berdampak signifikan terhadap manajemen Food waste. Melibatkan sampel yang beragam dari berbagai latar belakang geografis, budaya, dan demografi akan meningkatkan pemahaman tentang bagaimana pilihan makanan, praktik penanganan makanan, perilaku konsumsi, dan rutinitas berbelanja mempengaruhi Food waste. Penelitian mendatang sebaiknya mengeksplorasi faktor-faktor kontekstual seperti kebijakan pemerintah, infrastruktur logistik, dan edukasi konsumen untuk mengurangi Food waste secara efektif melalui studi eksperimental terhadap kampanye edukasi, program pelatihan, dan teknologi penyimpanan inovatif.
